Not sure exactly what to call this – but, I enjoyed it. And I don’t like broccoli.
I combined a bunch of recipes and ideas and flavors–and came up with something that people actually took second helpings of. (Second helpings of broccoli at a dinner party? Yeah, it’s that good.)
Cook broccoli in boiling water until a little tender, but still bright green a crisp. (This is especially important so after you’ve baked it, it still has good consistency.) Drain and cool. Then cut lengthwise into approx. 1/4 in strips….make sure each piece is about bite-sized, otherwise it’s too hard to scoop out and eat.
Put down a layer of broccoli in a buttered casserole dish. Then, sprinkle minced garlic, diced butter, red pepper flakes, and grated cheese on the top. (Go heavier on the spices than you think…broccoli is a pretty strong vegetable on its own.) Lay down another layer of broccoli and repeat. Top with a third layer of broccoli and some additional cheese.
I also put some cornmeal breadcrumbs on top of mine. For this, melt about a tablespoon butter in a saucepan with some minced garlic. Then, add about a cup and a half of cornbread crumbs. These add a bit of sweetness and some additional texture.
